What is this course?

How to Actually Cook is a 6-week virtual cooking course, where you’ll learn, discuss, drink, cook, and taste together with a small class of curious cooks from around the country. When you sign up for the course, I’ll send you 2 books, my workhorse knife, a digital scale, and a glass fermentation chamber, along with invites to all of our class Zoom meetings. The cost of the course is $699.00 which includes books, supplies, class, and individualized coaching sessions.

We meet over Zoom twice a week: Friday evenings are for discussing big ideas (and sharing a drink), and Monday evenings are for a virtual cooking lesson to put those ideas to use. Each class meeting will be recorded, to accommodate scheduling conflicts. After each virtual cooking lesson, I’ll reach out over text for an individual check-in.

Discussing Big Ideas

Zoom, Fridays 6:30-8pm CST

Think: college Zoom lecture but you’re drinking with your friends and no student loans.

During these sessions we’ll discuss the big idea for the week, and where it fits in the overall framework for how to actually cook. We’ll discuss how the idea applies to things you already like to cook and eat, as well as ask and answer questions.

Virtual Cooking Lesson

Zoom, Monday 5:30-7pm CST

This is our time to take ingredients + understanding and turn them into delicious food. We’ll cook a dish from start to finish emphasizing the week’s big idea. Dishes include everything from steak and rice, homemade pickles, a perfect tomato sauce with pasta. These sessions are designed to demonstrate the week’s concept, and give a clear path to make the dishes your own.

Individual Check-ins

Text, Flexible Timing, Asynchronous

After each group cooking lesson, I’ll text you individually to check in about this week’s content. For some, this may be a space to clarify concepts or techniques that felt confusing. For others, it will be a space to extend and connect what they are learning. Getting individualized feedback from a professional chef is part of what makes this course unique!
